ohhh la...la.......coffee cappuccino chocolate chip cookie

Yessss it's coffee cappuccino chocolate chip cookie.....so for you coffee addicts grab your spatula and get yourself to make this cookie hehehheheee........... actually the coffee cappuccino flavour was not that strong since I was only using the paste BUT I already have in my mind next time to use the 'real' thing instead errrmmmmm sound so ...so....so...........full of caffeine isn't it?



Okey...this recipe actually from Rima the original recipe is called coffee chocolate chip cookie but sinceI was using coffee cappuccino paste so mine is called coffee cappuccino choc chip cookie :)

The ingredients

200g margarine
50g   butter.............I used 250gm butter
75g   castor sugar
90g   brown sugar.......I used 165gm brown sugar
3 eggs yolk 
1/2 teaspoons vanilla essence
1    teaspoons coffee oil..........I used 3 tablespoons coffee cappuccino paste
120g chocolate chips
100g cashew nuts toasted, chopped............I used almond
350g plain flour
15g cocoa powder
½ teaspoons baking powder





Method

Preheat oven to 160 C
Grease a pan with margarine
Beat butter, sugar and brown sugar until smooth
Add the eggs one by one beat till combined. Add vanilla essence and coffee oil....coffee cappuccino paste beat well
Add sifted flour, cocoa powder & baking powder into the mixture and stir well
Add chocolate chips and cashew nuts..mix well.
Bake in the pre heated oven for 15 minutes
Remove and let it cool.

Very Easy Lemon Yoghurt Cake....my midnite companion!!!!

Wooohooooooo it's Thursday already :( time really flies !!!!!!..... Last nite while doing some work my mind was thinking something sweet to bite for 'a break' so these what I did :) I got this recipe from my fren Faizah quite some time ago...just look at the title "Very Easy Lemon Yoghurt Cake"....don't you love how it sounds hehehheee.......yeappp it's easy..easy...really easy :)


The recipe is taken from allrecipes.com

Allow me just C& P the recipe :-

2 lemons, rind, grated finely
1 cup (250ml) vegetable oil
2 eggs
1½ cups (250g) raw sugar
½ teaspoon salt
1 cup (250g) Greek style plain yoghurt .....I used normal plain yoghurt
3 tablespoons fresh squeezed lemon juice
2 cups wholemeal (280g) self raising flour .....I used normal self raising flour





Preparation method
Prep: 15 minutes
Cook: 40 minutes
Extra time: 5 minutes

1.Preheat oven to 180 degrees C. Grease and flour a 23 cm cake tin. ....I used papercups

2.Grate all the peel from the lemons into the mixing bowl. Add the oil, eggs and sugar beat with a beater until thick and well blended.

3.Add the salt, yoghurt and lemon juice and beat again briefly to mix well. Fold in the flour.

4.Pour the cake mixture into a the prepared tin and bake for 30 - 40 minutes or until the sides start to shrink, the centre springs back when pressed and a skewer comes out clean. It will be slightly moist. ...it took only 10 minutes for me...since I'm using papercups

5.Leave to cool in pan for about 10 minutes before turning carefully out onto a cooling rack.

6.Serve slices sprinkled with a little icing sugar and top with thick clotted cream or just whipped cream. ...I omitted this

Nasi Hujan Panas.... why only 3 colours?

Good Day Peeps !!! While cooking this rice my Alya asked me this question why only 3 colours why we can't put more colours like rainbow? I answered her...."because these are the colours that peope usually use and furthermore I have only these 3 colours"...well frankly speaking I didn't know how to answer her actually but why not maybe next time I'll put more colours then it can be Rainbow Rice instead of Nasi Hujan Panas...phewwwww luckily she did not ask me why named it "Nasi Hujan Panas" kekekekee.... then I should start googling for the answer ......as for now do enjoy the "Nasi Hujan Panas" :)

I served the rice with Ayam Masak merah, Mix Vegt & Papadom...

The recipe from Kak Ummi


Ingredients :


4 cups Basmathi rice ~ soaked for 10 minutes ( i soaked for 1/2 hour),washed and put through a strainer
5 cups of water
2 chicken cubes
2 screwpine leaves
food colouring - green,yellow,red
2 Star anise (bunga lawang)
1 Cinnamon stick (kulit kayu manis)
3 Cardamon (buah pelaga)
3 Cloves (bunga cengkih)
1/2 onions ~ sliced
2 cloves garlic ~ sliced
1/2 inch ginger -sliced
1 tablespoon ghee
2 tablespoon cooking oil
salt to taste
For garnishing
Fried shallot
raisins




Method :

1. Heat a pot and add in the cooking oil and ghee.

2. Add in the star anise, cinnamon stick, cardamon, cloves, shallots and garlic. Fry till fragrant.

3. Add in rice saute for awhile..then transer to a rice cooker

4. Add in water, salt. chicken cubes and screwpine leaf. Stir well.

4. Leave to cook.

5. When almost ready, put a few drops of coloring on three parts of the rice. Do not stir.

6. Leave it for a while, then stir to mix.

8. Sprinkle the raisins and cover to cook.

Roti Naik Pahang.... for munchkins' brekkie :)

Good Morning Peeps !!!!........ The internet line was so slow last nite so I 'merajuk' went to the kitchen and ended up making these buns. Finished baking at 11.30 p.m eeemmmm the smell of freshly baked buns were so tempting, irresistible so I had it with a cuppa hehhee...what can I say.......I was just "building up my body" then off to la...la...la...land :)

and...these are my munchkins brekkie this morning!

as usual I C & P the recipe :)

Ingredients :

1 egg
2 tablespoons condensed milk
Water (weigh egg + condensed milk + water to make 300ml)
3/4 cup sugar
500 g flour
1 tablespoon milk powder
2 teaspoons instant dried yeast (I used Mauripan)
2 tablespoons margarine
1 teaspoon shortening

Topping :

A bit of margarine
Coarse sugar




Bread maker method :


1. Into the breadmaker pan, pour in the water, egg and condensed milk. Add sugar.

2. Top it with flour, milk powder and instant dried yeast.

3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine and shortening. Leave the bread maker to finish the cycle which will takes about 1 1/2 hour or so.

4. Remove the dough from the pan and divide the dough into 20 equal portions. Roughly about 49 to 50g each.

5. Form each portion into a ball and arrange on a baking tray. Leave to rise for another 30 minutes or so.

6. Bake in a pre-heated oven at 180c for 30 minutes or till golden brown.

7. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

Heritage Chocolate Cake...errrmmmmmmmm yummylicious !!!

O.M.G!!!!! weekend is over sob...sob...sob how I wish everyday is a weekend heheheheeee. Not doing much over the weekend just lazying...lazying...lazyingggggggggg....yes that's what I can do THE BEST!
Managed to make these cuppies which turn out to be yummy....yummm...yummmm :)



The recipe from mamafami
As usual I will just C&P

Ingredients :

2/3 cup butter or margarine ~ softened
1-3/4 cups sugar .... I used 1 1/4 only
3 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup HERSHEY'S Cocoa ...I used Van Houten
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups buttermilk or sour milk*



Directions :

1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans. ...I used papercups

2. Beat butter, sugar, eggs and vanilla in large bowl until fluffy. Combine flour, cocoa, baking powder, baking soda and salt; add alternately with buttermilk to butter mixture, beating just until smooth. Pour batter into prepared pans.

3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. ....it took only 10 minutes since I used papercups.


* To sour milk: Use 4-1/2 teaspoons white vinegar plus milk to equal 1-1/2 cups.

Oreo Muffins..... easy peasy recipe..hmmm I loikeeeee !!!!

Hhhmmmm...... what to say? what to write?...... eeerrrrkkkkk this recipe is for people like me... someone who does not have the time to spend in the kitchen for hours...& hours, who have children that are keen to  "help"... this is the recipe Peeps...it's easy, quick & simple and the best thing is since I used small papercups  it took only 10 minutes to bake yipppppeeeeeee :)

and....it's marvellous just look at the melting choc huuhuuuhhhuuuuuuu...............



The recipe from mamafami

Ingredients :

1 egg
1/2 cup milk
1/4 cup butter, melted
1 1/2 cups flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup chocolate chips
1 cup Oreos, crushed

Hehheeee..... the aftermath :)



Method :


1. Heat oven to 180 degrees C. Line the muffin tray with papercups.

2. Beat together the egg, milk and butter.

3. Stir in the remaining ingredients except the Oreos.

4. Fold in the Oreos; batter will be lumpy.

5. Spoon into prepared muffin tins and bake for 15 to 20 minutes.

Best Chocolate Chip Cookie..... that's what the recipe says!!!

Good Day Peeps!!! For me the best cookie is the choc chip cookie and it is my all time favourite. Be it crispy, chewy, nutty, small, big.......still the best among the rest. Since I love choc chip cookie so....so... of course this recipe is one of my favourite that I have tried and tested  before...hhhmmmm mind you!... not that many recipes that I have tried kekkekekekekke :)

Ingredients


Serves: 24

250g butter, softened
220g (1 cup) caster sugar
250g (1½ cups) dark brown soft sugar
2 eggs
2 teaspoons vanilla essence
410g (3¼ cups) plain flour
1½ teaspoons bicarbonate of soda
3 teaspoons hot water
½ teaspoon salt
375g dark chocolate bits
125g (1 cup) chopped walnuts




Preparation method


Prep: 20 minutes
Cook: 10 minutes

1.Preheat oven to 180 C.

2.Cream together the butter, caster sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla essence.

3.Dissolve bicarbonate of soda in hot water. Add to the mixture along with salt. Stir in flour, chocolate chips and nuts. Drop by large spoonfuls onto ungreased baking trays.

4.Bake in the preheated oven for about 10 minutes, or until edges are nicely browned.

Marble Cheese Cake......not so marble :(

Good Morning Peeps !!!!! Last nite I baked this Marble cheese cake....huhuhuuuuuu but it turned out not so marble laaaaaa :( My Anis Dania had this for breakfast and she showed to me a thumb up sign.... isn't she is such an Angel hehhehehheheh ...:)
Anyway I brought some to the office and my collegue like it so I guess it was not so bad after all....

Ingredients :

(A)

185g butter
1/4 cup cocoa powder
1/2 cup castor sugar
1 cup self-raising flour
2 eggs

(B)

250g cream cheese
1/2 cup sugar
1/4 cup fresh milk
1 egg
1 teaspoon vanilla essence

Method :

1. Melt butter over low heat. Then add in cocoa powder. Leave to cool.
2. Add in sugar and stir. Add in eggs, one at a time. Finally add in flour and stir until well mixed.. Set aside.
3. In another bowl, beat the cream cheese and sugar till creamy. Add in the egg, vanilla essence and fresh milk.
4. Spoon 2 tablespoons of the cocoa mixture onto the middle of the prepared tin (line with greaseproof paper). Top it with 2 tablespoons of the cream cheese mixture. Continue doing so, until all the mixture finishes.
5. Bake in a preheated oven at 175 C for 45 minutes or until cake is done. Leave overnight before cutting.

Nasi beringin......Not Pohon beringin hokey!!!!

and again...."Selamat Hari Raya Aidil Adha"...hhhahaahaa too late isn't it?  But I still in the "Raya" mood so I guess there's nothing wrong to wish that....... had to drag these lazy feet to work this morning huhuuhuuuu :(

So for this Raya I've made this Nasi Beringin...huhuhuuuu MIL not here performing Haj otherwise you all know lah kannnn kekekkekekeek :)



Oh ya...I forget to put turmeric powder so that's why la the rice looks sooo...sooo...sooo

BAHAN-BAHANNYA :-)


1 kg beras basmathi, rendam 20 minit dan toskan
1500 ml santan (kurang lebih)
4 helai daun pandan, disimpul
2 batang serai, dititik
150 g minyak sapi
1 camca besar garam
1 camca besar serbuk ketumbar*
1 camca teh serbuj jintan manis*
1 camca teh serbuk kunyit*(*bahan rempah)
1 biji bawang besar#
6 ulas bawang putih#
3 cm halia#
50 g badam#(#dikisar halus)


CARA MEMBUATNYA :-)

Sukat beras tadi...nisbah beras dengan santan = 1 beras : 1 1/2 santan. Ketepikan. Panaskan minyak sapi dalam periuk. Tumis daun pandan dan serai hingga harum, masukkan bahan kisar halus dan juga rempah. Kacau rata.

Bila terbit minyak, tuang santan yang telah disukat tadi dan masukkan garam. Kacau rata dan masak dengan api sederhana hingga mendidih. Matikan api.

Masukkan beras yang telah disukat dalam rice cooker, tuang no. 2 dalam rice cooker tadi dan kacau rata bersama beras. Masak seperti biasa. Bila nasi betul2 kering, gemburkan perlahan. Boleh dihidangkan..

Spicy Shrimp and Spaghetti Aglio Olio.... Delizioso.. errr....deliziosa ????

A common question asked by me during the weekends...
Q : People .... what would like to have for lunch? Rice...or something else..(usually...pasta/spaghetti/noodle)?
A common answer
A:  Huh rice? No...No...Rice ...... pasta...pasta.../spaghetti..../noodle..Yes :)

So I've made this Spicy Shrimp and Spahetti Aglio Olio...... actually was thinking to make seafood aglio olio but couldn't get mussel in the market today :(


 The recipe was taken from foodnetwork here is the recipe I cut & paste the recipe :-

Ingredients


Spicy Shrimp:....I've made 1/2 from the recipe.

2 pounds jumbo shrimp, peeled and deveined
1 lemon, juiced
1 cup chopped flat-leaf parsley (a couple of handfuls) .... I used dried mixed herbs about 1 tablespoon
1 teaspoon crushed red pepper flakes ....I used chilli flakes
4 cloves garlic, crushed and peeled
 Coarse salt, about 1 teaspoon

2 tablespoons (a couple of generous drizzles) extra-virgin olive oil

Aglio Olio:

1/4 cup (4 turns around the pan in a light stream) extra-virgin olive oil
1 (2-ounce) tin anchovy fillets ...I substituted with anchovy cube
6 to 8 large cloves garlic, crushed and minced
1/2 teaspoon crushed red pepper flakes
1/4 cup finely chopped flat leaf parsley, a couple of handfuls
Coarse salt
1 pound spaghetti (I used angel hair) , cooked to al dente
Tomato and Onion Salad, as an accompaniment
Crusty bread, as an accompaniment ...I've made garlic bread

Directions
Combine shrimp with next 6 ingredients and toss to coat shrimp evenly.
Heat a large, nonstick skillet over medium high heat, then add half of the shrimp. Cook shrimp 3 minutes until pink and just firm. Remove shrimp to a warm platter and repeat process with remaining shrimp.

Return pan to heat and reduce heat to medium low. Add 1/4 cup extra-virgin olive oil. Add anchovies, garlic, and pepper flakes to oil. Break up anchovies with a wooden spoon until they melt away into the oil and garlic mixture.

Toss spaghetti in the pan with parsley and the garlic oil, then season with a little coarse salt, to your taste. Top servings of garlic and oil spaghetti with spicy shrimp and serve with Tomato and Onion Salad and Crusty Bread.

Cook's Notes: Prepare the shrimp while the pasta is cooking.

Prep your garlic and parsley for aglio olio and set them, as well as drained pasta and remaining ingredients all within arm's reach of your stove top.

The aroma will be intense! Cooked anchovies have a salted-nutty (rather than fishy) taste that compliments the garlic as it sweetens and softens.

Tomato and Onion Salad:

5 medium plum tomatoes, halved lengthwise, gently seeded, and thinly sliced
1 small white skinned onion, peeled, halved lengthwise, and thinly sliced
1/4 cup chopped flat-leaf parsley (a couple of handfuls)
A generous drizzle extra-virgin olive oil, about 2 tablespoons
Coarse salt and black pepper

Crusty Bread, as an accompaniment

Toss the tomatoes and onions with the chopped parsley, oil, salt, and pepper. Let stand while you prepare dinner, about 20 minutes. Re-toss and serve salad with crusty bread for mopping up juices and oil.

Yield: 4 servings







Fruits cocktail pudding.....to cool down :)

Selamat Hari Raya Aidil Adha to friends & Family...errrrr a bit too late huh? Well it has been said "Better late than never". I've made this pudding as a dessert. I'm glad everyone enjoys it. The recipe from my mom... I don't know where she gets the recipe but it's worth trying hehehheheee :)


Recipe :-

Bahan-Bahan A

1     paket agar-agar
200 gm gula - anggaran dalam 4 senduk gula
3/4  camca besar tepung kastad di campur dengan sedikit air
1     tin susu cair

Cara-cara

Masak agar-agar dengan air sehingga larut. Kuantiti air sekadar agar-agar sama dengan paras agar-agar.
Apabila agar-agar sudah larut masukkan gula, bancuhan tepung kastad kacau rata
Masukkan susu cair dan rasa.
Sekiranya kurang manis boleh ditambah gula
Sekiranya campuran bahan-bahan tidak pekat boleh ditambah sedikit campuran tepung kastard.
Masukkan dalam bekas/loyang untuk disejukkan


Bahan-bahan B-Kuah

1 tin buah-buahan cocktail -asingkan sirup dan buah-buahan
1 tin susu cair
1 tin air -ikit sukatan tin buah-buahan cocktail tadi
3/4 camca besar tepung kastard dibancuh dengan sedikit air
200 gm gula-aggaran dalam 4 senduk gula
sehelai daun pandan
secubit garam

Cara-cara

Satukan sirap, air, gula, garam dan daun pandan di dalam periuk. masak sehingga mendidih
Masukkan tepung kastard dan susu cair biarkan mendidih sebentar dengan api yang sederhana
Masukkan buah-buahan cocktail
Rasakan kemanisannya sekiranya kurang manis tambahkan gula ...angkat
Sejukkan dalam peti ais



Cara penyediaan

Potong agar-agar kecil-kecil dan hidangkan bersama kuahnya.

I'm backkkkkkk..........with mini sausage buns & cinnamon rolls

Hallooooooooooo!!!!!!!!!!!!!.it has been awhile since the last time I updated this blog. M.I.A hehehhehehe...  not that I was not doing any cooking...but it was just same old thing..and same old recipe and I was not in the mood to do blog walking to find new recipe to be tested....hehheehe what an excuse!!! Okey...okey stop all this rambling. Let's check out what I did last night for my smurfs' brekkie this morning..............


The dough recipe is same old recipe that I have been using .... here

As for the dough if you are not a big fan to wholemeal bread just ignore the wholemeal flour and use the bread flour for the total of 250gm.

INGREDIENTS :-)


200 grams bread flour (high protein flour)
50   grams whole meal flour
50   grams castor sugar
1/2  teaspoon salt
10   grams milk powder
1/4  teaspoon bread improver
1/4  teaspoon bread softerner
30   grams egg
6     grams instant yeast
20   grams shortening/butter
125 ml warm water (if you are using Breadmaker....room temperature water will do)

 Methods :-

FOR DOUGH :-
Stir together yeast and warm water let it stand for 5 minutes or till bubbled/foamy.
Combine all other ingredients except for butter then add in the yeast mixture...stir until mixture is well blended and form a dough.
Add in butter and continue to knead until smooth and elastic (about 20 minutes)
Place dough in a large bowl. Cover with plastic wrap, and let rise in a warm place for 40 minutes or until doubled in bulk.


BREADMAKER method : Place all the ingredients in the Breadmaker. Select the dough function and ON. Wait until the breadmaker finish it's job takes about 1 1/2 hour depends on the type of the Breadmaker.

When the dough has doubled in size punch it down. Place onto a lightly floured surface.


For CINNAMON ROLLS
INGREDIENTS for filling :-

1 1/2 Tablespoon butter ...melt
3 Tablespoon brown sugar *
1/3 teaspoon ground cinnamon *(*combine ingredients marked * in a bowl.Stir to combine).
1/2 cup raisins

In a medium-sized bowl place the brown sugar and cinnamon. Stir to combine. Set aside.
Roll the dough into a square.
Brush with the melted butter.
Sprinkle the filling evenly over the rolled out dough and top with raisins.
Carefully roll the dough into a log and pinch the edges to seal. Slice the log (roll) into ten-sized pieces. Arrange a piece of the dough pieces paper cup sized 4 inch.
Let dough rise again in a warm place for about 45 minutes. 
Bake in the preheated oven at 180C for 25 minutes.
Brush the bread with butter once it come out from the oven.

For the SAUSAGE BUNS

Blanched the sausages...let it cool.
Cut and divide the dough into 10 portions depends on you....as for me I've made mini buns so I cut each sausage into 2.
Roll each piece into a long thick place a piece sausage and roll to seal the sausage like wrapping up.
Place in greased tray and let to rest for about 45 minutes.
Bake in preheated oven at 180C for 25 mins.
Brush the bread with butter once it come out from the oven.

Almond Cookies..... started my day !

One more week before Raya and am proudly to say that this is my 5th Raya Cookies....though one of them left  only 1/4 of the jar and will be finished after iftar hehehehehehe... dunno whether I should just make another type of cookie to replace it or to make the same cookie again errrmmmmm decision....decision ????

I made this almond cookies this morning after reading Mat Gebu's review... hopefully it will turn out as good as his review :))))



BAHAN-BAHANNYA :-)
150 g mentega
100 g gula aising
1 biji telur gred A (berat kurang lebih 60 g sebiji)
1/2 camca teh esen vanilla
100 g tepung gandum*
100 g tepung kastard*
75 g tepung jagung (cornstarch)*(*disatukan dan diayak)
50 g serbuk badam
50 g tepung gandum (extra)

UNTUK HIASAN:-)
1 kuning telur
Badam cincang secukupnya

CARA MEMBUATNYA :-)
  1. Pukul mentega dan gula aising hingga berkrim. Masukkan telur dan esen vanilla. Terus memukul hingga gebu.
  2. Sementara itu gaul serbuk badam bersama tepung yang telah diayak, kemudian masukkan tepung tadi sedikit demi sedikit ke dalam adunan mentega, gunakan speed perlahan. Jika adunan kelihatan terlalu lembik, masukkan sedikit lagi tepung (50 g, extra), hingga adunan tidak melekit. (Biar kan sekejap adunan...)
  3. Ambil 1/3 doh tadi dan canai 1/2 cm tebal, terap dengan acuan kegemaran dan susun atas dulang pembakar, sapu kuning telur dan tabur badam cincang, tekan sedikit supaya badam melekat. Bakar dalam oven yang telah dipanaskan pada suhu 175C selama 15 - 20 minit. Sejukkan atas jaringan sebelum disimpan dalam bekas kedap udara...

Roast chicken........again but everyone loves it!

Roast chicken................ becoz mama ran out of idea what to cook for iftar and becoz mama was busy baking raya biscuits. I guess what is the easiest thing to cook when you're in that situation...Roast Chicken, put all the ingredients in the blender, marinate the chicken, roast the chicken in the oven then after 11/2-2 hour tinggggg!!!! Dinner is served everyone :)))))))))))))))))))))))))



The roast chicken was served with steamed vegt, fries and of course black pepper sauce. Since time was a bit tight I use the instant black pepper sauce just add water and cornstarch mixed with a little bit of water to thicken the sauce and taraaaaaaa !!!!!!!!!!!!!!

crispy choc chip cookie

Recipe from Chef Liza

Bahan A
125 g butter
125 g majerin
1 sudu besar shortening
160 g gula halus
1 biji kuning telur
1 s/k esen vanilla

Bahan B [gaul rata]
230 g tepung gandum]
20 g serbuk koko ] ayakkan
100 g coklat cips
50 g white coklat cips [boleh gantikan dgn coklat rice]
50 g badam cincang [roasted]
50 g nestum  


Cara
1. Gaulkan butter, majerin, shortening dan gula sehingga sebati.
2. Masukkan kuning telur dan esen vanila. Kacau rata.
3. Masukkan bahan B perlahan dan kacaukan dengan senduk kayu.
4. Sudukan adunan kecil2 [besar guli] dalam loyang.
5. Bakar dalam oven yg telah dipanaskan suhu 180'C selama 25 minit atau sehingga masak.
6. Sejukkan dan simpan dalam balang kedap udara

Pineapple Tarts

Yoooo hooooo Raya mood is here hhheeeeee :)))) Ok..ok.... I just finished baking these pineapple tarts. Surprisingly this simple recipe turned out to be superb well to me la..... I baked the tarts in the cup cakes cases so it's easier to handle :)))))

Bahan
60 gm butter *
190 gm majerin  *  I use all butter i.e 250gm
70 gm gula halus
1 biji kuning telur
1 s/k esen vanilla
350 gm tepung gandum
50 gm tepung jagung

Jem Nenas..
boleh dibeli dikedai bahan kueh/kek
atau..
1 biji nenas ] blend dan masak sampai pekat baru + gula
1/2 cawan air ]
1 cawan gula
Bahan Glaze/pengilat
2 kuning telur
2 s/kecil air
pewarna kuning
 
Cara.
1. Gaulkan butter,majerin dan gula supaya rata.
2. Masukkan kuning telur dan esen vanilla dan gaul sehingga rata.
3. Masukkan tepung gandum dan tepung jagung yg telah diayakkan.
4. Gaulkan sehingga rata dan sebati.
*** I use hand mixer to mix these ingredients :))))
5. Gunakan acuan Nestar dan pamkan adunan.
6. Kepalkan jem nenas sebesar biji kurma.
7. Letakkanjem nenas diatas adunan dan gulungkan.
8. Masukkan adunan biskut dalam acuan kertas.
9. Sapukan dengan bahan glaze tadi.
10. Bakar dalam oven suhu 180'C sehingga kuning keemasan atau masak dalam 20 minit.
11. Bila telah masak, sejukkan dan simpan dalam bekas kedap udara.

waffle.............. shortcut, easy & guaranteed !!!!!

Heeeeheeee....... see the title.... don't believe it? well it's true very the true heeeheeee :)))))


First time using the waffle maker... teraaaaaaaaa looks yummy isn't it? Well to tell you the truth lately I'm a little bit busy I do not have time to blogging from one blog to another to find good recipe on waffle and my Alya has been asking me to make waffle I guess she is more excited than I am. So what do I do? Found a way to make waffle... quick, easy & of course as you can see it was a SUCCESS :)))) hheeeeee 


A confession to make... I used the instant pancake mixture by Nona just add water, cooking oil & an egg. I put a little bit more water than what was suggested on the box. Put the mixture in the waffle maker. Within minutes it was ready scooped an ice-cream, sprinkled some toasted almond flakes, colourful choc rice & drizzled some choc syrup..........and it's DONE !!!!

Wholemeal Bread & Bun

Good Day Peeps....... I made these wholemeal bread & buns a couple of weeks ago unfortunately I do not have the time make an entry :(

I just cut & paste the recipe ye :)))))

resipi:
400gm tepung roti
100 gm tepung whole meal
20gm susu tepung
45gm gula kastor
2 cubit garam
1 pkt yis segera
2 st bread improver
* gaul rata semua bahan*
kemudian masukkan 1 st bread softener...gaul rata lagi

300ml air
1 biji telur
60 gm majerin/butter/shortening

*pecah telur & pukul sikit...campurkan dengan 150ml air...kacau & tuang dlm adunan tepung...uli sambil tuang air sedikit2...tuang baki 150ml air sedikit demi sedikit...anda mungkin guna air lebih atau kurang drp sukatan bergantung kepada tahap kandungan air dlm tpg...
*uli sehingga rata kemudian masukkan butter.. sy guna 45gm shj...uli lagi hingga adunan rata & cantik...
keluarkan adunan dr mixer...uli dengan tangan seketika..then perap ...tutup doh dengan plastik hingga kembang 2x ganda...

***** I use bread baker instead. Put all the ingredients in the bread maker and set the BM to dough function wait until the process finish.
 
saya bahagikan doh kpd 2 bahagian..1 buat loaf.. 1 lg buat sardin buns...
bakar pada suhu 180-200 darjah celsius selama 45 min atau hingga masak..

Brownies.........made everyone happy :)))))

My final post for tonite and this week................I safetly can say that this brownies is everyone favourite in this house the search for their favourite chocolate brownies is stop here but I might gonna try do other choc brownies just for my own enjoyment !

But this time I sprinkled some almond flakes on top of the brownies and served it with ice-cream :)))) Yummy!!!!!





Bukhari Rice...........my first attempt!

Ohhhhh dunno wat to write so layannnnn jelah this recipe......I also made vegetable kurma and Roast Chicken Ala Kenny Roger's The verdict? The other half said the Rice & the chicken is delicious.....how about the kurma? Maybe he lost his word after eating the rice and the chicken and how about Me?.....I am just  a Happy Bunny :))))))


BUKHARI RICE

I use Faiza's Bukari Rice spice. The recipe from the back of the packet. However this recipe I've taken from here

Ingredients :
2 tbsp Faiza’s Bukhari Powder....I use 1 Tbsp
5 Onions ....I use 2 onions sliced
10 cloves garlic ...I use 5 sliced
300gm tomato puree....I blended 2 ripe tomatoes without water
150gm ghee blend or cooking oil...I use cooking oil
1 chicken (cut and fried) or 1kg beef .....I use 1 cube chicken
1kg Faiza’s Basmathi Moghul Rice...............I use 5 pots basmathi rice
Salt to taste
***the amount of water must be equal with the rice
 
 
Cooking Method
1. Heat oil. Sauté blended (sliced) item until fragrant
2. Add Bukhari Powder and tomato puree (blended), sauté until it turns oily
3. Add in the water or beef broth. Bring to boil and salt to taste
4. Add rice and after five minutes add chicken or beef and stir well. Cook on low heat.
5. Nice to served with pickles and salad
Chicken ala Kenny Roger's

The recipe from Kak Ummi 
Bahan-bahan:-
  • 1 ekor ayam (bersihkan dan tidak perlu dipotong kecil)
Bahan2 untuk perap ayam : -
  • 3 biji bawang besar
  • 4 biji bawang putih
  • 1 inci halia
  • 2 atau 3 sudu besar sos lada hitam
  • 2 sudu besar madu
  • 1 ketul kiub ayam Knorr
  • 2 sudu besar gula pasir- (*akak guna gula perang)
  • 2 sudu besar herba campuran (akak xda ni, letak campuran dried parsley, oregano + basil)
  • 1 1/2 sudu teh garam halus
  • Sedikit air untuk mengisar kesemua bahan make-up.
  • Sedikit mentega
Cara-cara:-
  1. Campur kesemua bahan make-up dengan sedikit air dan kisar.
  2. Lumurkan keseluruhan bahan tadi diluar dan dalam ayam yang telah dibersihkan.
  3. Perap selama 1 1/2 jam
  4. Sapu sedikit mentega keseluruhan ayam dan bakar/panggang.
  5. Bakar selama 1 1/2 jam atau sehingga ayam masak. (Semasa membakar, selepas 1/2 jam pertama, sapukan ayam dengan minyak n campuran rempah yang menitis. Ini supaya ayam tidak terlalu kering. )



 

Sambal ikan bilis bun

Bun again......well I'm fully utilising the bread maker. Well I have to admit it is very easy using the bread maker just put everything in it and set the dough function and ON. While waiting for the dough I can do other chores ermmmmm..........multi tasking is easy SOMETIMES!

Other ingredient :-

Sambal ikan bilis.........You need to make it a bit dry. :))))))))

Sausage bun

Made this yesterday fulfilling Alya's Order again. What a mother for..right? hehheeee......let me keep this short as I'll be posting few more posts :))))


I use this recipe  however this time I use only bread flour the wholemeal flour I substituted it with bread flour as well.

OTHER INGREDIENTS :-
8 sausages boiled and cooled
Chili sauce
Mayonnaise
Eggs ........... lightly brush the bread with egg wash before baking
Once the bread came out from oven brush it with butter.

Cinnamon roll......my favourite :)

Hi Peeps! It's late and I'm still awake..........actually I'm waiting for another batch of the bread to finish baking with sambal ikan bilis as the filing requested by Alya. She loves savoury buns but Mom on the other side love sweet buns. I love this cinnamon roll recipe...the bread is soft although added wholemeal flour to it. 

The recipe from Mat Gebu

It's late my bread is ready...so I just copy & paste from his blog :))))

BAHAN-BAHANNYA :-)
200 gram tepung roti (high protein flour)
50 gram tepung whole meal
50 gram gula halus @ gula kastor
1/2 camca teh garam halus
10 g susu tepung (mat guna susu "everyday")
1/4 camca teh bread improver
1/4 camca teh bread softerner
30 g telur (pecahkan 1 biji, kacau sedikit dan timbang)
6 gram instant yeast
20 g lemak sayur (shortening)
125 ml air suam (kalau guna Breadmaker guna air biasa)
5 biji ceri merah, dikerat dua setiap biji, untuk hiasan

BAHAN TABUR :-)
1 1/2 camca besar mentega, dicairkan
3 camca besar gula perang (brown sugar)*
1/3 camca teh serbuk kulit kayu manis*(*disatukan dan gaul rata2)
1/2 cawan kismis,

 


CARA MEMBUATNYA :-)
  1. UNTUK DOH :- Larutkan yis dalam air suam, biar berbuih. Satukan semua bahan lain kecuali mentega, masukkan bancuhan yis dan gaul rata hingga menjadi doh. Tambah mentega dan terus menguli hingga mendapat doh yang kenyal dan anjal (kurang lebih 20 minit). Bulat2kan doh, letak dalam bekas dan balut dengan plastik bersih, biarkan 45 minit hingga naik. KAEDAH LAIN :- Satukan semua bahan2 untuk doh dalam breadmaker, pilih setting untuk "DOH" dan tekan "ON", tunggu hingga siap (selalunya BM mengambil masa 30 minit menguli dan 1 jam memerap, ikut jenis BM masing2).
  2. UNTUK CINNAMON ROLL :- Tabur tepung pada meja kerja, keluarkan doh, tumbuk untuk membuang udara. Tekan2 dan canai sehingga menjadi 4 persegi (tabur sedikit tepung jika melekat). Sapu dengan mentega cair, tabur dengan gula perang+serbuk kayu manis tadi rata2. Akhir sekali ratakan kismis. Gulung seperti swissroll, gulung ketat2. Kerat dengan pisau tajam kepada 10 bahagian sama besar.
  3. Isi setiap potongan dalam paper cup bersaiz 4 inci, tekan sedikit biar leper dan hias dengan sepotong ceri merah. Buat hingga siap dan perap 45 minit. Sapu telur (baki dari 30 gram tadi) rata2 dan bakar dalam oven yang telah dipanaskan pada suhu 180C selama 25 minit. Keluarkan dari oven dan sapu dengan baki mentega cair. Biarkan sejuk dan boleh hidangkan.... Selamat mencuba..

Tuna Roll Sandwich......Mode : No mood :(

Arghhhhh Malaysia lost to Taiwan ..........grrrrrrrr!!!!!! I made this tuna roll sandwich while watching the game. BIG MISTAKE do not use the paper liners like the one I was using, the bread stick to it. Please use the one like Mat Gebu's.

BAHAN DOH :-)
250 gram tepung roti (high protein flour)
50 gram gula halus @ gula kastor
1/2 camca teh garam halus
10 g susu tepung (mat guna susu "everyday")
1/4 camca teh bread improver
1/4 camca teh bread softerner
30 g telur (pecahkan 1 biji, kacau sedikit dan timbang)
6 gram instant yeast
20 gram mentega
125 ml air suam (kalau guna Breadmaker guna air biasa)

BAHAN INTI TUNA :-)
1 camca besar mentega, dicairkan
1 tin tuna, ditoskan biar kering, lecek hancur
2 1/2 camca besar Mayonnaise
1 biji bawang besar, dadu kecil
1 pokok daun bawang, hiris halus, asingkan sedikit untuk hiasan
1 biji limau kasturi, perah jusnya (optional)
1/2 camca teh lada hitam yang baru dikisar, asingkan sedikit untuk hiasan

CARA MEMBUATNYA :-)
  1. UNTUK DOH :- Larutkan yis dalam air suam, biar berbuih. Satukan semua bahan lain kecuali mentega, masukkan bancuhan yis dan gaul rata hingga menjadi doh. Tambah mentega dan terus menguli hingga mendapat doh yang kenyal dan anjal (kurang lebih 20 minit). Bulat2kan doh, letak dalam bekas dan balut dengan plastik bersih, biarkan 45 minit hingga naik. KAEDAH LAIN :- Satukan semua bahan2 untuk doh dalam breadmaker, pilih setting untuk "DOH" dan tekan "ON", tunggu hingga siap (selalunya BM mengambil masa 30 minit menguli dan 1 jam memerap, ikut jenis BM masing2).
  2. UNTUK ROLL TUNA SANDWICH :- Satukan semua bahan untuk inti tuna kecuali mentega, kacau rata. Ketepikan. Keluarkan doh, tumbuk untuk membuang udara, tabur sedikit tepung pada meja kerja, dan canai menjadi 4 persegi. Sapu permukaan doh tadi dengan mentega cair rata2. Tuang inti tuna dan ratakan. Tinggalkan sedikit ruang di hujung doh. Gulung seperti swissroll dan ketatkan. Kemas kan bahagian kiri dan kanan gulungan doh dan kerat kepada 10 bahagian sama besar.
  3. Susun dalam paper cup jenis bersiaz 4 inci. Tekan sedikit biar rata. Buat hingga siap. Perap 45 minit hingga kembang. Sapu telur (baki dari 30 g tadi), tabut baki hirisan daun bawang dan lada hitam. Bakar dalam oven yang telah dipanaskan pada suhu 190C selama 25 minit atau hingga perang keemasan. Sejukkan atas jaringan sepenuhnya....***** sapu kan mentega selepas keluarkan daripada oven

Durian...Durian...Durian !!!!

Made these for brekkie today ! These dishes reminded me of my late grandma she used to make these for me As for measurement of the ingredients........you have to adjust according to your own taste :))))) 

CUCUR DURIAN @ DURIAN FRITTER


INGREDIENTS:
Multi-purpose flour........I used self-raising flour
Durian flesh.....seeded and mashed
Sugar
a pinch of salt

METHOD:

In a bowl mix all the ingredients.........until well combined. If necessary add a little bit of water.
Heat up oil in a wok.
Take a tablespoon of batter and spoon it into the oil.
Fry until it turns slightly brown.


SERAWA DURIAN


INGREDIENTS:-
Durian
Sugar......you also can use Gula Melaka/ brown sugar....I used white sugar only
 Salt
Coconut milk
Pandan Leaf..............I did not put this, just don't like the conflicting smell :(

METHOD:-

Put everything in a pot and cook on a low heat. Stir occasionally.
The gravy is ready when it's thicken and coconut milk is cooked.
Serve with roti jala or bread.

Rich Cocoa Pudding............HOT !..HOT !...HOT!

Hot !...Hot!...Hot!....hahahhaaa we just had durian. Having durian at this hour with this temperature is...INSANE! Well no one force us to do that.....Actually after breakfast we went out to send my car for service....while waiting for the car we ronda2 and saw durian sellers and we bought some hehheheee. We came back had the durians for lunch brilliant !!!!! We couldn't finish all the durian, the leftover .....I made 'tempoyak' and the other potion am going to make some 'kuah Durian' (which I dunno when ?)...and we still have 3 durians left. We also bought some mangosteen a  friend told me that we should have mangosteen after durian to balance it ....sort of heaty and cold type of fruits........not sure the truth of this! I'll post the pic later...but right now this Cocoa Pudding which I made earlier while making the curry mee this morning. I think you can just eat the cocoa pudding even without the cocktail .........that's itself is delicious and so chocolatey. This definetly will cool us down.........:))


The recipe from Mat Gebu 

FOR THE PUDDING :-
4 1/4 cups water
1/2    cup cocoa powder, sifted
1       cup sugar
1/2    cup milk powder, sifted
1/2    tsp salt
4       Tbsp corn flour
1/2    tsp vanilla essence
10     g jelly powder
3       Tbsp butter

METHOD :-

  1. Place all the ingredients except for the butter in a pot and mix by using whisker until well combined. Cook over low heat continuosly stirring until thicken..
  2. Once thicken remove from and add in the butter. Stir until well combined..Transfer to the mould and let it cool.




 
***However for the cocktail sauce I made this recipe instead of Mat Gebu's recipe

FOR THE COCKTAIL SAUCE:-
1     can fruits cocktail separate the fruits and the syrup
1     can evaporated milk
1     can water (use the fruits cocktail can as a measurement)
3     Tbsp custard powder (mixed with a little bit of water)
       sugar
1     screw pine leaf @ daun pandan
1     pinch salt


METHOD :-
  1. Put the syrup, sugar, salt and pandan leaf in a pot. Bring to boil.
  2. Add in the custard, evaporated milk and the fruits cocktail.
  3. Cook over low heat continuosly stirring until thicken..Let it cool . 
TO SERVE


Take out the cocoa pudding from the mould and spoon over the sauce on the pudding. Best serve cool.

Curry mee........I loike :))))

Happy weekend peeps ...have a good day ahead. early day for me today as Alya is having '1 murid 1 sukan' today. She was very excited that she woke up at 5 this morning hadoiiiiiii :(((( After she has gone to school I made this curry me for breakfast....hmmm it has been awhile since the last time I made curry mee .................Slurrrppppp delicious!!

The recipe from From my kitchen

1/2  kilo prawns.....remove shell. Use the shell to make stock by boiling water & the shells
1  bowl of cooked cockles ***
2  tbsp dried shrimps *
    belacan *
3  onions *
4  garlic cloves *
1  inch ginger *
1 inch galangal *
3 small packets beef/chicken curry powder....I used 3 tbsp
1 handful laksa leaves @ vietnamese mint @ daun kesum
2 torch ginger bud @ bunga kantan
8 candlenuts *
3 lemon grass..........I did not put this *
2 Tbsp blended dried chili paste *

Blend all the ingredients marked *
Coconut milk......I used  1 packet coconut milk 200ml
Tamarind Juice
Cockles ***
Fish balls
Tauhu pok
1 sprig curry leaves (use only the leaves) ***
1 kaffir lime leaves (shredded) ***
cooking Oil
Yellow mee...blanched....I used angel hair spaghetti 
I added ingredients marked ****



METHOD :-

Heat the oil in a  large pot fry the blended ingredients over medium-low heat until fragrant. Add in the curry powder (mixed with water to make a paste ), curry leaves & kaffir lime leaves.
Add in tamarind juice.
Fry the paste until the oil begins to rise to the surface.

Add in the stock and bring to boil.
Add in the coconut milk, tauhu pok, fishballs, cockles, prawns,laksa leaves and the ginger bud .
Add in salt and continue cooking until gravy is thicken. Take out the laksa leaves.

Garnishing ingredients :-
Crisp-fried shallots
2-3 red chillies, seeded and sliced
Handful of coriander leaves, chopped
Bean sprout...blanched
Green mustard @ sawi...blanced

Serve the yellow mee with gravy together and the garnishing ingredients.
