Brownies.........made everyone happy :)))))

My final post for tonite and this week................I safetly can say that this brownies is everyone favourite in this house the search for their favourite chocolate brownies is stop here but I might gonna try do other choc brownies just for my own enjoyment !

But this time I sprinkled some almond flakes on top of the brownies and served it with ice-cream :)))) Yummy!!!!!





Bukhari Rice...........my first attempt!

Ohhhhh dunno wat to write so layannnnn jelah this recipe......I also made vegetable kurma and Roast Chicken Ala Kenny Roger's The verdict? The other half said the Rice & the chicken is delicious.....how about the kurma? Maybe he lost his word after eating the rice and the chicken and how about Me?.....I am just  a Happy Bunny :))))))


BUKHARI RICE

I use Faiza's Bukari Rice spice. The recipe from the back of the packet. However this recipe I've taken from here

Ingredients :
2 tbsp Faiza’s Bukhari Powder....I use 1 Tbsp
5 Onions ....I use 2 onions sliced
10 cloves garlic ...I use 5 sliced
300gm tomato puree....I blended 2 ripe tomatoes without water
150gm ghee blend or cooking oil...I use cooking oil
1 chicken (cut and fried) or 1kg beef .....I use 1 cube chicken
1kg Faiza’s Basmathi Moghul Rice...............I use 5 pots basmathi rice
Salt to taste
***the amount of water must be equal with the rice
 
 
Cooking Method
1. Heat oil. Sauté blended (sliced) item until fragrant
2. Add Bukhari Powder and tomato puree (blended), sauté until it turns oily
3. Add in the water or beef broth. Bring to boil and salt to taste
4. Add rice and after five minutes add chicken or beef and stir well. Cook on low heat.
5. Nice to served with pickles and salad
Chicken ala Kenny Roger's

The recipe from Kak Ummi 
Bahan-bahan:-
  • 1 ekor ayam (bersihkan dan tidak perlu dipotong kecil)
Bahan2 untuk perap ayam : -
  • 3 biji bawang besar
  • 4 biji bawang putih
  • 1 inci halia
  • 2 atau 3 sudu besar sos lada hitam
  • 2 sudu besar madu
  • 1 ketul kiub ayam Knorr
  • 2 sudu besar gula pasir- (*akak guna gula perang)
  • 2 sudu besar herba campuran (akak xda ni, letak campuran dried parsley, oregano + basil)
  • 1 1/2 sudu teh garam halus
  • Sedikit air untuk mengisar kesemua bahan make-up.
  • Sedikit mentega
Cara-cara:-
  1. Campur kesemua bahan make-up dengan sedikit air dan kisar.
  2. Lumurkan keseluruhan bahan tadi diluar dan dalam ayam yang telah dibersihkan.
  3. Perap selama 1 1/2 jam
  4. Sapu sedikit mentega keseluruhan ayam dan bakar/panggang.
  5. Bakar selama 1 1/2 jam atau sehingga ayam masak. (Semasa membakar, selepas 1/2 jam pertama, sapukan ayam dengan minyak n campuran rempah yang menitis. Ini supaya ayam tidak terlalu kering. )



 

Sambal ikan bilis bun

Bun again......well I'm fully utilising the bread maker. Well I have to admit it is very easy using the bread maker just put everything in it and set the dough function and ON. While waiting for the dough I can do other chores ermmmmm..........multi tasking is easy SOMETIMES!

Other ingredient :-

Sambal ikan bilis.........You need to make it a bit dry. :))))))))

Sausage bun

Made this yesterday fulfilling Alya's Order again. What a mother for..right? hehheeee......let me keep this short as I'll be posting few more posts :))))


I use this recipe  however this time I use only bread flour the wholemeal flour I substituted it with bread flour as well.

OTHER INGREDIENTS :-
8 sausages boiled and cooled
Chili sauce
Mayonnaise
Eggs ........... lightly brush the bread with egg wash before baking
Once the bread came out from oven brush it with butter.

Cinnamon roll......my favourite :)

Hi Peeps! It's late and I'm still awake..........actually I'm waiting for another batch of the bread to finish baking with sambal ikan bilis as the filing requested by Alya. She loves savoury buns but Mom on the other side love sweet buns. I love this cinnamon roll recipe...the bread is soft although added wholemeal flour to it.

It's late my bread is ready...so I just copy & paste from his blog :))))

BAHAN-BAHANNYA :-)
200 gram tepung roti (high protein flour)
50 gram tepung whole meal
50 gram gula halus @ gula kastor
1/2 camca teh garam halus
10 g susu tepung (mat guna susu "everyday")
1/4 camca teh bread improver
1/4 camca teh bread softerner
30 g telur (pecahkan 1 biji, kacau sedikit dan timbang)
6 gram instant yeast
20 g lemak sayur (shortening)
125 ml air suam (kalau guna Breadmaker guna air biasa)
5 biji ceri merah, dikerat dua setiap biji, untuk hiasan

BAHAN TABUR :-)
1 1/2 camca besar mentega, dicairkan
3 camca besar gula perang (brown sugar)*
1/3 camca teh serbuk kulit kayu manis*(*disatukan dan gaul rata2)
1/2 cawan kismis,

 


CARA MEMBUATNYA :-)
  1. UNTUK DOH :- Larutkan yis dalam air suam, biar berbuih. Satukan semua bahan lain kecuali mentega, masukkan bancuhan yis dan gaul rata hingga menjadi doh. Tambah mentega dan terus menguli hingga mendapat doh yang kenyal dan anjal (kurang lebih 20 minit). Bulat2kan doh, letak dalam bekas dan balut dengan plastik bersih, biarkan 45 minit hingga naik. KAEDAH LAIN :- Satukan semua bahan2 untuk doh dalam breadmaker, pilih setting untuk "DOH" dan tekan "ON", tunggu hingga siap (selalunya BM mengambil masa 30 minit menguli dan 1 jam memerap, ikut jenis BM masing2).
  2. UNTUK CINNAMON ROLL :- Tabur tepung pada meja kerja, keluarkan doh, tumbuk untuk membuang udara. Tekan2 dan canai sehingga menjadi 4 persegi (tabur sedikit tepung jika melekat). Sapu dengan mentega cair, tabur dengan gula perang+serbuk kayu manis tadi rata2. Akhir sekali ratakan kismis. Gulung seperti swissroll, gulung ketat2. Kerat dengan pisau tajam kepada 10 bahagian sama besar.
  3. Isi setiap potongan dalam paper cup bersaiz 4 inci, tekan sedikit biar leper dan hias dengan sepotong ceri merah. Buat hingga siap dan perap 45 minit. Sapu telur (baki dari 30 gram tadi) rata2 dan bakar dalam oven yang telah dipanaskan pada suhu 180C selama 25 minit. Keluarkan dari oven dan sapu dengan baki mentega cair. Biarkan sejuk dan boleh hidangkan.... Selamat mencuba..

Tuna Roll Sandwich......Mode : No mood :(

Arghhhhh Malaysia lost to Taiwan ..........grrrrrrrr!!!!!! I made this tuna roll sandwich while watching the game. BIG MISTAKE do not use the paper liners like the one I was using, the bread stick to it. Please use the one like Mat Gebu's.

BAHAN DOH :-)
250 gram tepung roti (high protein flour)
50 gram gula halus @ gula kastor
1/2 camca teh garam halus
10 g susu tepung (mat guna susu "everyday")
1/4 camca teh bread improver
1/4 camca teh bread softerner
30 g telur (pecahkan 1 biji, kacau sedikit dan timbang)
6 gram instant yeast
20 gram mentega
125 ml air suam (kalau guna Breadmaker guna air biasa)

BAHAN INTI TUNA :-)
1 camca besar mentega, dicairkan
1 tin tuna, ditoskan biar kering, lecek hancur
2 1/2 camca besar Mayonnaise
1 biji bawang besar, dadu kecil
1 pokok daun bawang, hiris halus, asingkan sedikit untuk hiasan
1 biji limau kasturi, perah jusnya (optional)
1/2 camca teh lada hitam yang baru dikisar, asingkan sedikit untuk hiasan

CARA MEMBUATNYA :-)

  2. UNTUK ROLL TUNA SANDWICH :- Satukan semua bahan untuk inti tuna kecuali mentega, kacau rata. Ketepikan. Keluarkan doh, tumbuk untuk membuang udara, tabur sedikit tepung pada meja kerja, dan canai menjadi 4 persegi. Sapu permukaan doh tadi dengan mentega cair rata2. Tuang inti tuna dan ratakan. Tinggalkan sedikit ruang di hujung doh. Gulung seperti swissroll dan ketatkan. Kemas kan bahagian kiri dan kanan gulungan doh dan kerat kepada 10 bahagian sama besar.
  3. Susun dalam paper cup jenis bersiaz 4 inci. Tekan sedikit biar rata. Buat hingga siap. Perap 45 minit hingga kembang. Sapu telur (baki dari 30 g tadi), tabut baki hirisan daun bawang dan lada hitam. Bakar dalam oven yang telah dipanaskan pada suhu 190C selama 25 minit atau hingga perang keemasan. Sejukkan atas jaringan sepenuhnya....***** sapu kan mentega selepas keluarkan daripada oven

Durian...Durian...Durian !!!!

Made these for brekkie today ! These dishes reminded me of my late grandma she used to make these for me As for measurement of the ingredients........you have to adjust according to your own taste :))))) 

CUCUR DURIAN @ DURIAN FRITTER


INGREDIENTS:
Multi-purpose flour........I used self-raising flour
Durian flesh.....seeded and mashed
Sugar
a pinch of salt

METHOD:

In a bowl mix all the ingredients.........until well combined. If necessary add a little bit of water.
Heat up oil in a wok.
Take a tablespoon of batter and spoon it into the oil.
Fry until it turns slightly brown.


SERAWA DURIAN


INGREDIENTS:-
Durian
Sugar......you also can use Gula Melaka/ brown sugar....I used white sugar only
 Salt
Coconut milk
Pandan Leaf..............I did not put this, just don't like the conflicting smell :(

METHOD:-

Put everything in a pot and cook on a low heat. Stir occasionally.
The gravy is ready when it's thicken and coconut milk is cooked.
Serve with roti jala or bread.

Rich Cocoa Pudding............HOT !..HOT !...HOT!

Hot !...Hot!...Hot!....hahahhaaa we just had durian. Having durian at this hour with this temperature is...INSANE! Well no one force us to do that.....Actually after breakfast we went out to send my car for service....while waiting for the car we ronda2 and saw durian sellers and we bought some hehheheee. We came back had the durians for lunch brilliant !!!!! We couldn't finish all the durian, the leftover .....I made 'tempoyak' and the other potion am going to make some 'kuah Durian' (which I dunno when ?)...and we still have 3 durians left. We also bought some mangosteen a  friend told me that we should have mangosteen after durian to balance it ....sort of heaty and cold type of fruits........not sure the truth of this! I'll post the pic later...but right now this Cocoa Pudding which I made earlier while making the curry mee this morning. I think you can just eat the cocoa pudding even without the cocktail .........that's itself is delicious and so chocolatey. This definetly will cool us down.........:))


The recipe from Mat Gebu 

FOR THE PUDDING :-
4 1/4 cups water
1/2    cup cocoa powder, sifted
1       cup sugar
1/2    cup milk powder, sifted
1/2    tsp salt
4       Tbsp corn flour
1/2    tsp vanilla essence
10     g jelly powder
3       Tbsp butter

METHOD :-

  1. Place all the ingredients except for the butter in a pot and mix by using whisker until well combined. Cook over low heat continuosly stirring until thicken..
  2. Once thicken remove from and add in the butter. Stir until well combined..Transfer to the mould and let it cool.




 
***However for the cocktail sauce I made this recipe instead of Mat Gebu's recipe

FOR THE COCKTAIL SAUCE:-
1     can fruits cocktail separate the fruits and the syrup
1     can evaporated milk
1     can water (use the fruits cocktail can as a measurement)
3     Tbsp custard powder (mixed with a little bit of water)
       sugar
1     screw pine leaf @ daun pandan
1     pinch salt


METHOD :-
  1. Put the syrup, sugar, salt and pandan leaf in a pot. Bring to boil.
  2. Add in the custard, evaporated milk and the fruits cocktail.
  3. Cook over low heat continuosly stirring until thicken..Let it cool . 
TO SERVE


Take out the cocoa pudding from the mould and spoon over the sauce on the pudding. Best serve cool.

Curry mee........I loike :))))

Happy weekend peeps ...have a good day ahead. early day for me today as Alya is having '1 murid 1 sukan' today. She was very excited that she woke up at 5 this morning hadoiiiiiii :(((( After she has gone to school I made this curry me for breakfast....hmmm it has been awhile since the last time I made curry mee .................Slurrrppppp delicious!!

The recipe from From my kitchen

1/2  kilo prawns.....remove shell. Use the shell to make stock by boiling water & the shells
1  bowl of cooked cockles ***
2  tbsp dried shrimps *
    belacan *
3  onions *
4  garlic cloves *
1  inch ginger *
1 inch galangal *
3 small packets beef/chicken curry powder....I used 3 tbsp
1 handful laksa leaves @ vietnamese mint @ daun kesum
2 torch ginger bud @ bunga kantan
8 candlenuts *
3 lemon grass..........I did not put this *
2 Tbsp blended dried chili paste *

Blend all the ingredients marked *
Coconut milk......I used  1 packet coconut milk 200ml
Tamarind Juice
Cockles ***
Fish balls
Tauhu pok
1 sprig curry leaves (use only the leaves) ***
1 kaffir lime leaves (shredded) ***
cooking Oil
Yellow mee...blanched....I used angel hair spaghetti 
I added ingredients marked ****



METHOD :-

Heat the oil in a  large pot fry the blended ingredients over medium-low heat until fragrant. Add in the curry powder (mixed with water to make a paste ), curry leaves & kaffir lime leaves.
Add in tamarind juice.
Fry the paste until the oil begins to rise to the surface.

Add in the stock and bring to boil.
Add in the coconut milk, tauhu pok, fishballs, cockles, prawns,laksa leaves and the ginger bud .
Add in salt and continue cooking until gravy is thicken. Take out the laksa leaves.

Garnishing ingredients :-
Crisp-fried shallots
2-3 red chillies, seeded and sliced
Handful of coriander leaves, chopped
Bean sprout...blanched
Green mustard @ sawi...blanced

Serve the yellow mee with gravy together and the garnishing ingredients.
