Oreo Muffins..... easy peasy recipe..hmmm I loikeeeee !!!!

Hhhmmmm...... what to say? what to write?...... eeerrrrkkkkk this recipe is for people like me... someone who does not have the time to spend in the kitchen for hours...& hours, who have children that are keen to  "help"... this is the recipe Peeps...it's easy, quick & simple and the best thing is since I used small papercups  it took only 10 minutes to bake yipppppeeeeeee :)

and....it's marvellous just look at the melting choc huuhuuuhhhuuuuuuu...............



The recipe from mamafami

Ingredients :

1 egg
1/2 cup milk
1/4 cup butter, melted
1 1/2 cups flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup chocolate chips
1 cup Oreos, crushed

Hehheeee..... the aftermath :)



Method :


1. Heat oven to 180 degrees C. Line the muffin tray with papercups.

2. Beat together the egg, milk and butter.

3. Stir in the remaining ingredients except the Oreos.

4. Fold in the Oreos; batter will be lumpy.

5. Spoon into prepared muffin tins and bake for 15 to 20 minutes.

Chocolate Brownie Muffins......lost of words ?????

Since I'm losing  my words so Peeps let's enjoy the pictures!!.....this choc brownie muffins is rich chocolatey taste...so if you are choc lover please try this recipe :)))))

The recipe is from Kak Ummi

Ingredients:-
  • 3/4 cup good quality baking cocoa powder- I used Van Houten
  • 1 tsp baking powder
  • 3/4 butter melted
  • 1/2 cup boiling water
  • 1 tbsp vanilla essence
  • 11/4 cups sugar ......I used 1 cup only
  • 2 eggs
  • 11/3 cups all purpose flour
  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips(optional)
  • 1/2 cup walnuts(optional) .....I used almond 


    
Method:-
  • Set oven to 350F (175C). line muffin tins with paper liners.
  • In a medium bowl combine cocoa and baking powder, mix to combine.
  • Add in boiling water, mix well with a wooden spoon to combine.
  • Add in melted butter and vanilla, mix well.
  • Add in the sugar, mix well with a wooden spoon. Stir in eggs with a wooden spoon, mix well until combined.
  • Mix the flour with salt, add in the chocolate chips and walnuts(or 1 cup of both)....I sprinkle the almond nibs on top.
  • Using an ice cream scoop fill each of the muffin tins almost to the top.
  • Bake for 25-30 minutes or until muffins are done, don't over-bake (might take a little longer, depending on how full the muffin tins are with the batter) Cool drizzle glaze

Banana chocolate chip Muffin



Recipe from my friend Anita. You can view her blog here  very talented and creative person. How I wish I am staying in KL and at anytime can join her class...insyallah one day :)

Here is the recipe :-

Pre-heat the oven to 180 C

A. DRY INGREDIENTS
1.5  cup of flour ...I use self-raising flour 
1     tablespoon cocoa powder
1     teaspoon baking powder ...I did not put this since I'm using self raising flour
1     teaspoon soda bicarbonate
1/2  teaspoon salt

Sift together all of the dry ingredients then add in 1/2 cup of chocolate chip. Stir to combine.

B. WET INGREDIENTS


1     egg
1/3  cup of corn oil
4     ripe bananas mashed = 1 cup
1/2  cup castor sugar.....I use brown sugar

Mix together all of the wet ingredients.

Fold in the dry ingredients. By using fork/spatula mix the ingredients until just moistened.

Bake for 25 minutes.

Blueberry Muffin

Blueberry Muffins
This recipe is taken from Anna Olson from Sugar 2
Original recipe is called Vanilla Jam Muffins but I call it Blueberry Muffin since I'm using Blueberry filling not Jam

Ingredients:

1 ½ cups milk
1 vanilla bean1 ½ cups sugar I use 1 Tablespoon of Vanilla Essence
2/3 cup vegetable oil
2 eggs
3 ½ cups all purpose flour
1 Tbsp baking powder
1 tsp nutmeg
1 tsp salt
½ tsp cinnamon I did not put this
½ cup raspberry jam I use Blueberry Filling

For Dip: I did not do this :(

¼ cup unsalted butter, melted
¼ cup sugar
½ tsp cinnamon
  
  
Method:

1. Preheat oven to 350°F. Heat milk with scraped seeds and pod of vanilla bean over medium-low heat about 15 minutes, to infuse flavour. Remove vanilla pod and let milk cool to room temperature. Whisk sugar, oil and eggs into cooled milk. In a separate bowl, sift together flour, baking powder, nutmeg, salt and cinnamon. Add to milk mixture and blend just until incorporated (do not overmix). Fill greased muffin tins 2/3 full with batter. Stir raspberry jam to soften and spoon a tablespoonful into centre of each muffin. Top with remaining muffin batter and bake for 35 to 45 minutes, until even light golden brown on top. Let muffins cool in tin for 15 minutes, then turn out to cool completely.

2. For dip, brush tops of muffins with melted butter and dip into sugar and cinnamon which have been mixed. Store muffins in an airtight container for 2 to 3 days or freeze and warm in oven or microwave to serve.

Lemon Yoghurt Muffin


My kids love LEMON  :)....they can actually eat lemon just like that...I mean lemon on it's own ....so anything made from lemon they simply love it be it as simple as lemonade to lemon cookies, lemon cheesecake [they even eat lemon on fish & chips!!!!!] you name it.... they'll love it. When I saw this recipe I know they will love this muffin...and I was right !!!

LEMON YOGHURT MUFFIN

Bahan-bahan :
200 gm self raising flour
1 tsp baking powder
1/2 biji lemon, perah jusnya
1 cup (140ml) plain yoghurt
100 gm castor sugar
100 gm butter
2 biji telur
Secubit garam
Sedikit parutan kulit lemon utk hiasan (saya parut 1/2 biji kulit lemon dan masukkan dalam adunan)

Cara-cara:
1. Cairkan gula castor dan butter secara double-boiler. Kacau menggunakan hand whisker sahaja.
Sejukkan seketika.
2. Campurkan yoghurt, jus lemon dan telur ke dalam bancuhan butter & gula tadi.
3. Ayak tepung bersama baking powder dan secubit garam.
4. Masukkan tepung ke dalam adunan butter dan kacau sekadar rata sahaja.
5. Sudukan adunan ke dalam papercups (saya pakai muffin cups)dan bakar pada suhu 180 darj cel selama 20min -25min.

Chocolate Chip Muffins




This recipe is taken from Nigella Lawson

Pre-Heat the oven 200 C

A.DRY INGREDIENTS

1 3/4 Cup all purpose flour
2 Teaspoon Baking Powder
1/2 Teaspoon Soda
3/4 Cup Chocolate chips & 1/4 Cup chocolate chips
2 Tablespoon cocoa powder
3/4 Cup Superfine sugar

Mix all the dry ingredients together

B.WET INGREDIENTS

1 Cup of milk
2/3 Cup vegetable oil
1 Egg
1 Tablespoon vanilla

Whisk all the wet ingredients together

Mix wet and dry ingredients together remembering that lumpy batter makes the best muffins . Spoon into the prepared muffin cases and sprinkle the remaining 1/4 cup of chocolate chip on top and bake for 20 minutes or until the muffins are dark, risen and springy.
