Black Bottom Cupcakes & the Ka Ba Booommm!!!



Another entry for today....recipe later eeehhhhhhh :)

One of Alya's fav cake...in fact she has been pestering me to bake this cake again but her mommy in the big "L"'s mood......so pity her :(

Eeeemmm have you been in the situation that you have enough  you just can't just sit down watching all the dramas & lies ? and ........suddenly Ka Ba Boom!!!!!! it all came out and the best thing is you don't feel guilty about it you feel gooood dammmn goooooddd hahahahahaha suddenly I remembered what I did to someone yesterday....served him right!!!!! and you know what he said to me with a shocked look on his face  "woooo you have transformed!!!!" Yeah right I am a transformer I can transform to be whoever I want to be and whenever and to whoever...mmmuahahahaaaaaaa :)

As promised..here is the recipe mind you the result totally looks different hehehheheee :)

Ingredients

  • 1 (8 ounce) package cream cheese
  • 1 egg
  • 1/3 cup white sugar
  • 1/8 teaspoon salt
  • 1 cup semisweet chocolate chips
  •  
  • 1 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1/4 cup cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 tablespoon distilled white vinegar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly butter muffin tins and set aside.
  2. Beat together the cream cheese, egg, sugar and salt. Stir in chocolate chips and set aside.
  3. In a separate bowl, sift together the flour, sugar, cocoa, baking soda and salt. Add the water, oil, vinegar, and vanilla. Beat until well combined. Batter will be thin.
  4. Fill muffin cups 1/3 full with the chocolate batter. Top each one with a spoonful of cream cheese mixture.
  5. Bake for 30 to 35 minutes.

I've made this brownies quite sometimes ago but do not have time to update...why? eemmmm what else..it's all because of my love & hate relationship work..work...work...arghhhhhhhhh I wish I can wake up in the morning and tell to my work..."that's it I have enough of you...I leave you and never will turn back" hahahhahaaaaa you wish Aziana!!!!!

The recipe is taken from mamafami

Ingredients A :

1 cup melted butter ( I used margarine )
1 cup evaporated milk ( I used fresh milk )
2 cups brown sugar
1 cup hot water
1/2-1 teaspoon Nescafe granules diluted in the hot water
2-3 tablespoons orange Sunquick

Ingredients B : Mix using a whisk

1 teaspoon vanilla essence
2 eggs (grade B)

Ingredients C : To be sifted

2 cups flour
1 cup cocoa powder
1 teaspoon baking powder
1 teaspoon soda bicarbonate

Method :

1. Preheat oven at 180 C for 10 minutes.
2. Mix ingredients A in a bowl.
3. Pour in ingredients B and mix well.
4. Finally add in ingredients C and stir to mix.
5. Pour the batter into a 10 x 10 inch tray, layered with greaseproof paper.
6. Bake for 30 minutes. (Time and temperature may differ, depending on your oven)
7. Remove from oven and let it cool. Drizzle with melted cooking chocolate and sprinkle with sugar deco (I did not do this).

ohhh la...la.......coffee cappuccino chocolate chip cookie

Yessss it's coffee cappuccino chocolate chip cookie.....so for you coffee addicts grab your spatula and get yourself to make this cookie hehehheheee........... actually the coffee cappuccino flavour was not that strong since I was only using the paste BUT I already have in my mind next time to use the 'real' thing instead errrmmmmm sound so ...so....so...........full of caffeine isn't it?



Okey...this recipe actually from Rima the original recipe is called coffee chocolate chip cookie but sinceI was using coffee cappuccino paste so mine is called coffee cappuccino choc chip cookie :)

The ingredients

200g margarine
50g   butter.............I used 250gm butter
75g   castor sugar
90g   brown sugar.......I used 165gm brown sugar
3 eggs yolk 
1/2 teaspoons vanilla essence
1    teaspoons coffee oil..........I used 3 tablespoons coffee cappuccino paste
120g chocolate chips
100g cashew nuts toasted, chopped............I used almond
350g plain flour
15g cocoa powder
½ teaspoons baking powder





Method

Preheat oven to 160 C
Grease a pan with margarine
Beat butter, sugar and brown sugar until smooth
Add the eggs one by one beat till combined. Add vanilla essence and coffee oil....coffee cappuccino paste beat well
Add sifted flour, cocoa powder & baking powder into the mixture and stir well
Add chocolate chips and cashew nuts..mix well.
Bake in the pre heated oven for 15 minutes
Remove and let it cool.

Very Easy Lemon Yoghurt Cake....my midnite companion!!!!

Wooohooooooo it's Thursday already :( time really flies !!!!!!..... Last nite while doing some work my mind was thinking something sweet to bite for 'a break' so these what I did :) I got this recipe from my fren Faizah quite some time ago...just look at the title "Very Easy Lemon Yoghurt Cake"....don't you love how it sounds hehehheee.......yeappp it's easy..easy...really easy :)


The recipe is taken from allrecipes.com

Allow me just C& P the recipe :-

2 lemons, rind, grated finely
1 cup (250ml) vegetable oil
2 eggs
1½ cups (250g) raw sugar
½ teaspoon salt
1 cup (250g) Greek style plain yoghurt .....I used normal plain yoghurt
3 tablespoons fresh squeezed lemon juice
2 cups wholemeal (280g) self raising flour .....I used normal self raising flour





Preparation method
Prep: 15 minutes
Cook: 40 minutes
Extra time: 5 minutes

1.Preheat oven to 180 degrees C. Grease and flour a 23 cm cake tin. ....I used papercups

2.Grate all the peel from the lemons into the mixing bowl. Add the oil, eggs and sugar beat with a beater until thick and well blended.

3.Add the salt, yoghurt and lemon juice and beat again briefly to mix well. Fold in the flour.

4.Pour the cake mixture into a the prepared tin and bake for 30 - 40 minutes or until the sides start to shrink, the centre springs back when pressed and a skewer comes out clean. It will be slightly moist. ...it took only 10 minutes for me...since I'm using papercups

5.Leave to cool in pan for about 10 minutes before turning carefully out onto a cooling rack.

6.Serve slices sprinkled with a little icing sugar and top with thick clotted cream or just whipped cream. ...I omitted this

Nasi Hujan Panas.... why only 3 colours?

Good Day Peeps !!! While cooking this rice my Alya asked me this question why only 3 colours why we can't put more colours like rainbow? I answered her...."because these are the colours that peope usually use and furthermore I have only these 3 colours"...well frankly speaking I didn't know how to answer her actually but why not maybe next time I'll put more colours then it can be Rainbow Rice instead of Nasi Hujan Panas...phewwwww luckily she did not ask me why named it "Nasi Hujan Panas" kekekekee.... then I should start googling for the answer ......as for now do enjoy the "Nasi Hujan Panas" :)

I served the rice with Ayam Masak merah, Mix Vegt & Papadom...

The recipe from Kak Ummi


Ingredients :


4 cups Basmathi rice ~ soaked for 10 minutes ( i soaked for 1/2 hour),washed and put through a strainer
5 cups of water
2 chicken cubes
2 screwpine leaves
food colouring - green,yellow,red
2 Star anise (bunga lawang)
1 Cinnamon stick (kulit kayu manis)
3 Cardamon (buah pelaga)
3 Cloves (bunga cengkih)
1/2 onions ~ sliced
2 cloves garlic ~ sliced
1/2 inch ginger -sliced
1 tablespoon ghee
2 tablespoon cooking oil
salt to taste
For garnishing
Fried shallot
raisins




Method :

1. Heat a pot and add in the cooking oil and ghee.

2. Add in the star anise, cinnamon stick, cardamon, cloves, shallots and garlic. Fry till fragrant.

3. Add in rice saute for awhile..then transer to a rice cooker

4. Add in water, salt. chicken cubes and screwpine leaf. Stir well.

4. Leave to cook.

5. When almost ready, put a few drops of coloring on three parts of the rice. Do not stir.

6. Leave it for a while, then stir to mix.

8. Sprinkle the raisins and cover to cook.

Roti Naik Pahang.... for munchkins' brekkie :)

Good Morning Peeps !!!!........ The internet line was so slow last nite so I 'merajuk' went to the kitchen and ended up making these buns. Finished baking at 11.30 p.m eeemmmm the smell of freshly baked buns were so tempting, irresistible so I had it with a cuppa hehhee...what can I say.......I was just "building up my body" then off to la...la...la...land :)

and...these are my munchkins brekkie this morning!

as usual I C & P the recipe :)

Ingredients :

1 egg
2 tablespoons condensed milk
Water (weigh egg + condensed milk + water to make 300ml)
3/4 cup sugar
500 g flour
1 tablespoon milk powder
2 teaspoons instant dried yeast (I used Mauripan)
2 tablespoons margarine
1 teaspoon shortening

Topping :

A bit of margarine
Coarse sugar




Bread maker method :


1. Into the breadmaker pan, pour in the water, egg and condensed milk. Add sugar.

2. Top it with flour, milk powder and instant dried yeast.

3. Set the bread maker to DOUGH setting and press start. When the dough is just combined, add in margarine and shortening. Leave the bread maker to finish the cycle which will takes about 1 1/2 hour or so.

4. Remove the dough from the pan and divide the dough into 20 equal portions. Roughly about 49 to 50g each.

5. Form each portion into a ball and arrange on a baking tray. Leave to rise for another 30 minutes or so.

6. Bake in a pre-heated oven at 180c for 30 minutes or till golden brown.

7. Once out of the oven, brush with a bit of butter. Place on a wire rack to cool. Keep in an airtight container.

Heritage Chocolate Cake...errrmmmmmmmm yummylicious !!!

O.M.G!!!!! weekend is over sob...sob...sob how I wish everyday is a weekend heheheheeee. Not doing much over the weekend just lazying...lazying...lazyingggggggggg....yes that's what I can do THE BEST!
Managed to make these cuppies which turn out to be yummy....yummm...yummmm :)



The recipe from mamafami
As usual I will just C&P

Ingredients :

2/3 cup butter or margarine ~ softened
1-3/4 cups sugar .... I used 1 1/4 only
3 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup HERSHEY'S Cocoa ...I used Van Houten
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups buttermilk or sour milk*



Directions :

1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans. ...I used papercups

2. Beat butter, sugar, eggs and vanilla in large bowl until fluffy. Combine flour, cocoa, baking powder, baking soda and salt; add alternately with buttermilk to butter mixture, beating just until smooth. Pour batter into prepared pans.

3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. ....it took only 10 minutes since I used papercups.


* To sour milk: Use 4-1/2 teaspoons white vinegar plus milk to equal 1-1/2 cups.
