Pizza everyone's favourite.......Oh what a day !!!!

Alya has been asking me to do pizza since last week. Well today I decided to make pepperoni pizza for dinner. The other half was attending a wedding with the girls so I was left with the twins. After I ON the breadmaker  the three of us went out to buy toppings for the pizza and also to buy Ultraman DVD for Ahmad Dani. When we left the sun was shining so bright so I did not bring in the clothes.I couldn't find the parking nearby the supermarket so I have to park the car a bit far. First we went to buy the DVD (or otherwise you can't peacefully do the shopping !) I keep on looking at the watch as I was doing the shopping I need to go back within 1 1/2 hr (The dough will be ready by then). Guess what.? the most important ingredients was out of stock so I bought sausages instead. As we were about to exit the supermarket the rain was pouring so heavily....oh NO! and there was no way the three of us were able to get in the car without soaking. After about 1/2 hour the rain was finally stopped...Thank God. When we reached home, the other half was already back with the girls......the clothes were all wet and I couldn't care ...went straight to the kitchen.take out the dough, preparing for the toppings and cook the pizzas.


The pizzas were ready at 6p.m we had our dinner,cleaned the kitchen...and now I have to pack my clothes as I am catching the train tonight for work......hope the other half can cope with the kids..all the best to him:)))

as for the sauce I used ready made pasta sauce.

The above pictures was our pizza...the toppings were sliced meatballs, (boiled1st) sausages, (boiled 1st) capsicum and button mushroom.
Whereas the children's pizza was this one..........the toppings were, sausages, meatballs, crab sticks and mushrooms....and of course they assemled it themselves :))))




My first white bread ...........finally!

Happy Sunday peeps!...........As for us our sundays normally will be filled with movies & dramas marathon, playing games, karaoke, napping....and of course what we love the most ......EATING :)

I made this white bread last nite before I went to bed. It was easy just put all the ingredients in the Bread maker & ON it..............and when I woke up this morning the bread was ready.


The recipe is from Kenwood

Ingredients 500g 750g 1 kg
Water 245 ml 290 ml 380 ml
Vegetable oil 1 tbsp 1¾ tbsp 1¾ tbsp
Unbleached white bread flour 350g 450g 600g
Skimmed milk powder 1 tbsp 4 tsp 2 tbsp
Salt 1 tsp 1½ tsp 1½ tsp
Sugar 2 tsp 1 tbsp 4 tsp
Easy blend dried yeast 1 tsp 1½ tsp 1½ tsp


I added 1 tsp bread improver

Kung Pao Chicken...........Quick & Easy :))))

It's Kung Pao chicken ye not Kung Fu Panda hehheeee! Very quick and easy recipe...I made this for dinner after coming back from work and manage to put the dish on the table before 8 ( I marinated the chicken  before I left for work this morning and keep it the fridge).


The recipe is taken from Kak Nor Secubit Garam

Ingredients
  • 1 chicken breast cut into small pieces *
  • 2 Tbsp oyster sauce *
  • 1 tsp corn flour *
Marinate all the ingredients marked *** for 15 minutes
Fry the chicken and set aside

FOR THE SAUCE to combine :-

  • 1/4 water + 1/2 cube chicken stock
  • 2 Tbsp sweet sauce sauce
  • 2 Tbsp chili sauce @ garlic chili sauce
  •  1 Tbsp sugar ........I did not put this !
  •  1 tsp salt
  • 1/2 tsp corn flour..........I mixed the cornflour and water and later to thicken the sauce

TO SAUTE

  • 2 Tbsp sesame oil + 1 Tbsp cooking oil
  • 8 dried chilies
  • 2 garlic
  • 2 inch of young garlic ....thinly sliced
  • 1/3 cup roasted cashew nuts

Method:

  • Leave about 2 Tbsp the oil from frying the chicken in the wok 
  • Fry the garlic and ginger until soft
  • Then add the dried chillies.
  • Add the sauce and cook until the sauce thicken............I added the cornflour at this point.
  • Then add in the chicken and stir with the sauce until well combined for 5 minutes and lastly add in the roasted cashew nuts.
  • Serve hot with white plain rice.................ENJOY!

Coffee Buns............to end the Father's day.

Weekend is over ........bye...bye weekend :))))))) So...let me be the first to wish you Happy Working and Happy Monday Blues peeps ahaks...ahaks....must be the caffeine in the coffee buns that I just made hahahhaaa.

The texture of these buns are so...so...so...soft I love it! Maybe next time I'll to recreate any other flavour using the same bread recipe.

Ingredients :

190 g high protein flour
50 g sugar
2 g salt
6 g instant dried yeast
1/2 teaspoon bread improver
1 egg yolk
50 g fresh milk
12 g instant coffee (I used instant 3 in 1 nescafe 20g)
60 g water roux





My water roux
 
1/2 teaspoon cappuchino coffee emulco .....I used chocolate emulco (that's explain the intense colour of my buns compare to Mamafami hehheeeee............beside over baked !)
30 g butter



 Method : (Breadmaker method)

1. Pour fresh milk into the breadmaker pan. Add in instant coffee, salt, sugar, egg and water roux.
2. Top it with sifted flour, dry yeast and bread improver.
3. Set the Breadmaker to Dough function.
4. Once the dough is just combined, add in butter and leave the Breadmaker to continue doing it's job. This process will take about 1 1/2 hour including prooving.
5. Remove dough from BM and punch down to release the air. Cut the dough 35g portion each. Make into round balls and leave to rest for 10 minutes.
6. Let the air out of the dough and make into round balls again. Arrange in the prepared tin.
7. Leave to proof till double the size.
8. Bake in a preheated oven at 180 C for 25 minutes or so.
9. Once out of the oven, brush with butter.


Oh ya this morning...I told you that we are going out to pay "upah" to our Penebar Roti Canai.....yes I did however...hehheee pity la Ayah...on his day still have to accomodate to the children's wants.

Roti canai...on Father's day!

Happy Father's day to all the fathers outhere :))))) As for us we started the celebration by torturing him to make our breakfast what......... a great way to celebrate the day huh? Well....not exactly 100% laaaaa I made the dough last nite before I went to bed and of course I prepared the curry as well.


The recipe from Anita

Ingredients :-
  • 1 mug water ....I put 250 ml water
  • 1 egg
  • 1 Tbsp condensed milk
  • 1 tsp salt
  • 1 Tbsp margarine
  • sugar (optional)..........I did not put this
  • Flour
  • I added 1/2 tsp of bread improver..........(tip from Anita)



 Method:-
  •  Mix everything together except flour....I use Whisker
  •  Then add in flour little by litte by using hand until it forms dough
  • Knead the dough to form a soft dough......I let the Bread Maker to do this job...set to the dough menu.
  • Divide the dough into 10 portion and mould into balls.
  • Coat the balls with margarine so that they won't stick to each other. 


  • Leave to rest for 5 hours
  • Spread @ tebar each ball on a smooth surface to for a very thin layer. Fold the four sides in to the middle...do it until finish all the portions
  • Spread each ball again
  • Then fry in the flat pan.

Blackpepper beef .......for 'breaking fast'

Today is the 3rd day I'm fasting....but I feel extremely tired compare to the last 2 days...maybe due to the weather it was quite hot today hopefully it will be rain tonite...he...he...he....wishful thinking :))))) I made this blackpepper beef for 'breaking fast' errrmmm it was yummy !!!!


The recipe is from Kak Nor

500gm daging batang pinang
1 sb serbuk lada hitam yg ditumbuk kasar - lebihkan jika ingin lebih pedas
1 biji lada benggala hijau....I did not put this
1 biji lada merah.....I did not put this
3 sb kicap manis
2 sb sos tiram
1 cawan air
1 sb tepung jagung yg dibancuh dgn 2 sb air
1/2 sudu garam halus dan 1/2 sb gula
*** I add sliced onion
minyak utk menggoreng


Cara-cara :-
  1. Potong daging nipis2 dengan cara melawan urat supaya daging tidak liat. Bersihkan dan toskan selama 1 jam atau lebih supaya daging tidak mengeluarkan air yg banyak ketika menggoreng.
  2. Potong panjang kedua2 lada. Sebelum itu hendaklah dibuang dulu butir2 lada
  3. Panaskan minyak. Sebolehnya digunakan minyak yg banyak dan menggunakan api yg kuat spt yg ditunjukajar oleh chef asal supaya daging itu tak perlu digoreng dgn lama. Goreng daging lebih kurang 3 - 4 minit sambil dikacau supaya rata masaknya dan angkat.
  4. Keluarkan minyak dan tinggalkan lebih kurang 3 sudu besar shj. Masukkan serbuk lada hitam dan kacau hingga berbau wangi dan masukkan lada merah. Lepas itu masukkan kicap manis, sos tiram, garam dan gula. Kacau sebati. Peringatan: garam tak perlu letak banyak2 kerana dah pun masin - dari kicap dan sos tiram
  5. Masukkan daging dan kacau sebati dan masukkan air. Sekiranya ingin lebih berkuah, lebihkan sukatan air. Biarkan mendidih, barulah dimasukkan lada benggala dan bancuhan air tepung jagung ...and sliced onion. Biarkan mendidih. Bila dah agak pekat boleh lah di padamkan api dan hidangkan panas2 dgn nasi putih.
## Kalau nak guna daging biasa pun boleh, hiris nipis2 dan rebus dgn sedikit air sehingga daging tu empuk. Pastu skip aje la step no 3.

Chocolate Brownie Muffins......lost of words ?????

Since I'm losing  my words so Peeps let's enjoy the pictures!!.....this choc brownie muffins is rich chocolatey taste...so if you are choc lover please try this recipe :)))))

The recipe is from Kak Ummi

Ingredients:-
  • 3/4 cup good quality baking cocoa powder- I used Van Houten
  • 1 tsp baking powder
  • 3/4 butter melted
  • 1/2 cup boiling water
  • 1 tbsp vanilla essence
  • 11/4 cups sugar ......I used 1 cup only
  • 2 eggs
  • 11/3 cups all purpose flour
  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips(optional)
  • 1/2 cup walnuts(optional) .....I used almond 


    
Method:-
  • Set oven to 350F (175C). line muffin tins with paper liners.
  • In a medium bowl combine cocoa and baking powder, mix to combine.
  • Add in boiling water, mix well with a wooden spoon to combine.
  • Add in melted butter and vanilla, mix well.
  • Add in the sugar, mix well with a wooden spoon. Stir in eggs with a wooden spoon, mix well until combined.
  • Mix the flour with salt, add in the chocolate chips and walnuts(or 1 cup of both)....I sprinkle the almond nibs on top.
  • Using an ice cream scoop fill each of the muffin tins almost to the top.
  • Bake for 25-30 minutes or until muffins are done, don't over-bake (might take a little longer, depending on how full the muffin tins are with the batter) Cool drizzle glaze

Oreo cheesecake in the middle of the night......... huh?????

Ok this is ala-ala Nigella Lawson sneaking in the middle of night eating food from the fridge heheeee :)))) Similar but not the same scenario! I made these cuppies after fetching hubby at Air Hitam yesterday by the time we reached home it was already 8 p.m and I finished baking at about 9 p.m then the cuppies need to be refrigerate for at least 4 hours I thought at first I have the patience but NO so I took 2 cuppies put it the freezer then after 1/2 hour it safetly transferred into my stomach and by that time it was 11.30 pm.....me sitting alone watching tv quietly enjoying the cheesecake.........BLISS!!!!!

Makes 30

Ingredients:
42 cream-filled sandwich cookies, such as Oreos, 30 left whole, and 12 coarsely chopped
2 pounds cream cheese..........@ 500gm  room temperature
1 cup sugar
1 tsp vanilla extract
4 large eggs, room temperature, lightly beaten
1 cup sour cream.........I used plain yoghurt
Pinch of salt





1. Preheat oven to 275 degrees.....@ 155 C. Line standard muffin tins with paper liners. Place 1 whole cookie in the bottom of each lined cup.

2. With an electric mixer on medium high speed, beat cream cheese until smooth, scraping down sides of bowl as needed. Gradually add sugar, and beat until combined. Beat in vanilla.

3. Drizzle in eggs, a bit at a time, beating to combine and scraping down the sides of the bowl as needed. Beat in sour cream and salt. Stir in chopped cookies by hand.

4. Divide batter evenly among cookie-lined cups, filling each almost to the top. Bake, rotating pan halfway through, until filling is set, about 22 minutes. Transfer to wire racks to cool completely. Refrigerate at least 4 hours (or up to overnight). Remove from tins just before serving.

Lontong...........for brunch!!!

Happy weekend People ! Today I made simple lontong for brunch.....using all the vegetable available in the fridge. I also made sambal tumis telur to be eaten with lontong unfortunately no kuah kacang......:(((( too lazy to make some!



BAHAN-BAHAN :-

1 kotak santan.........saya guna Harmoni
2 batang serai, dititik
1 biji bawang besar, dihiris halus *
3 ulas bawang putih *

sedikit halia *
2 camca besar udang kering, direndam 10 minit, toskan *
 Kisar bahan-bahan yang bertanda ****
1/2 cekak so hoon, dikerat dan direndam
2 keping fucuk dipotong rendam
2 keping tempe, dipotong kecil ...digoreng, angkat dan ketepikan

2 keping tauhu  ...digoreng, angkat dan ketepikan
1/2 camca teh serbuk kunyit
sayur kobis, dihiris
1/2 biji sengkuang, dipotong mancis
1 batang lobak merah, dipotong mancis
10 tangkai kacang panjang, dipotong serong

 ##### saya tambahkan bunga kobis, cendawan dan tomato .... sebab nak habiskan stok!
 

Cara membuatnya:-
  1. Di dalam periuk tumis bahan-bahan yang dikisar, serai dan serbuk kunyit hingga garing.
  2. Masukkan 2 liter air dan separuh santan masak hingga mendidih.
  3. Masukkan sengkuang, lobak merah, kobis dan fucuk dan soo hoon. Biar mendidih perlahan dan masukkan tauhu dan tempe. Tambah garam.
  4. Akhir sekali tuang baki santan dan kacau perlahan, biar mendidih perlahan. Angkat dan boleh dihidangkan bersama nasi impit dan sambal tumis..

I'm smiling :))))))))))

Thank God......for today! I have few things to do today...hiccups in between but finally managed to settle yipppeeeeee !!!!!!!!!!!!!

I reached home at 7 p.m....rushed to the kitchen and made myself this mango smoothie ooohhhhlalalaaa :))))


Ingredients :-

1 large mango ....about 3 cups of peeled, pitted and sliced fresh mango
1 cup fresh milk
2 cups ice cubes
sugar........to suit your taste.

Directions :

Put all the ingredients in a blender
Blend until the mixture mix well and smooth...........and Enjoy :))))
